crimini kebabs with red onion and parsley

    1 large red onion, cut into 1 1/2-inch pieces
    16 oz small crimini mushrooms, stems removed
    1 garlic clove, minced
    1/2 teaspoon dried thyme
    2 tablespoons extra virgin olive oil
    1 tablespoon red wine vinegar
    1/2 teaspoon dry mustard
    sea salt and freshly ground black pepper, to taste
    2 tablespoon fresh parsley, minced (for garnish)


1 - Make marinade by combining garlic, thyme, olive oil, red wine vinegar, mustard and salt and pepper.
     Mix to combine.
2 - Add mushrooms and onion pieces to marinade; allow to marinate for at least an hour.
3 - Thread mushrooms and onion pieces onto skewers.
4 - Preheat your grill on high for 15 minutes, covered. Brush grill grates with olive oil and then place kebabs
     on the hot grill. Lower the temperature to medium high and grill for about 15 minutes total, rotating as
     needed to cook evenly.
5- Garnish with fresh parsley and serve.
